Even in the middle of Salt Lake City, deep in one of the West's great deserts, it's still possible to get a taste of Europe. Opened in late 2008, Meditrina was one of the first restaurants to bring tapas-style small plates dining to Salt Lake, and has since become a favorite of the city. Diners flock there for the fusion dishes, paired with a wine list that's arguably unparalleled anywhere within the city.
Though Gilroy has since expanded, opening Porch, which focuses on Southern comfort foods, but the original establishment is still going strong. As Gilroy told Q Salt Lake magazine, "We serve fun food with flare."
