Last week, a Thai chef named Nam took over the tiny basement kitchen at Greenpoint's No Name Bar. The bar's former downstairs ramen nook now has cauldrons simmering fragrant lemongrass seafood noodle soup and Nam's fancy fishball noodle soup, which rival, and maybe even surpass, the flavors at Pok Pok NY. Nam says she uses her Bangkok grandmother's recipes -- and what a fun grandma she must have been to come up with the mind-blowing 'drunk man's noodle plate with beef.' Nam and her team plan to serve from 12:30 pm to 3 a.m. seven days a week while also running Am Thai Bistro in Flatbush. Everything is under $10 and available to eat in the bar or the leafy back garden. It's just too good a secret to keep to ourselves.

Nam poses with her tasty creations.
